Mermaid Sushi, located inside North Coast C0-Op in Eureka, Ca.  I am always skeptical of sushi because there are so many ways there can be hidden gluten inside.  I once had the opportunity to talk to the chef while she was making sushi.  She excitedly told me that it was almost all gluten free, except the tempura options and things that are clearly not going to be on my ok list.  But as far as just one of the great grab and go options she has available, with white or brown rice, is ok.  She has gf soy sauce on the counter to use and she uses it in all of her sauces.  I have had really great luck eating here.  I use it as my fast food option in Eureka.
